I find using a 3M sanding-sponge, after each mow, keeps the blades very sharp. It only takes a few passes, about 30 seconds.

Walk-behind, rotary-blade mowers require less than ~60ft/lbs of torque to fasten the blade assembly. How did you round off a bolt head, with that little of force and the proper size socket?
Try some penetrating oil and a pair of quality vise grips. Also, don't use an impact to fasten the assembly.

^ Ditto. I never spin the drum. I flip the handle and start a gentle arc, fall back on the new row, and then proceed forward again.
