Pruning advice

I planted these two trees last year as whips so this year they are going into their third year.

First tree is an apple so I'm trying for the central leader pruning. The top branch here is what I want to grow upwards and other than pruning the end to an upward bid, would your recommend doing anything else?

Second tree is a peach so vase style. As you can see, it has a high branch that has had two shoots already cut back. Should I just head that off? Then on the right side, I have 2 good branches growing from the same base. Should I pick one of those?
